I share on STS a set of deers that was available in Germany long time ago. But i forget the name. I believe the unknown figures are mostly from that set.

Is there any spotted female deer in markets these days?
I've just found papo and schleich doe which they aren't spotted

The only one I know is the pre-2012 Papo doe but you will have to search to find one.

Red does arent' supposed to be spotted but earlier versions of the Papo red deer doe used to be spotted. If this is an important aspect for your collection, I think this one is the best choice, though, be sure you get the right version.

But the spotted version isn't produced these years by papo.
The fallow deer doe is spotted in nature & I think famous brands haven't made it yet

Right, the Papo spotted version is not produced anymore but you can try to find it. Doe figures have very poor sales and they last for a long time in shops.
I thought you were asking for red deer specifically but sure there are a few deer species which retain the spots during adulthoood and fallow deer is one of them.
None of the major brands released a fallow deer doe and I don't believe it will happen soon, however, a few brands, like Hausser Elastolin, already released fallow deer does as you can see here.
Weirdly the New-Ray USA family doe has antlers what is not supposed. I don't know exactly what are you looking for but you can buy the CollectA fallow deer and remove the antlers, though, if you want to use it as a doe for another CollectA, it will result too big for a doe.
