Oh, this is exciting - can't wait to see it finished! The Iberian wolves I've seen in pictures have really interesting coloration. It should be fun to paint.

Yes, as you said every sculptor has his own way. And even different ways for different models pending on the size, the level of details and so. What I normally use to do is starting with the armature and imagine how it would fit the model finished. Then, continuously looking to my sketch, I try to start with the most detailed part, usually the head, and complete the figure baking it step by step (when I use polymer clay) to replicate it as I visualize it inside my mind...

However, this is the following steps 9 and 10:
